Today was Shrove Tuesday, or Pancake Day as I prefer to call it. So I made me a nice stack of pancakes this evening. A year ago I started using soy milk as I realised I was lactose intolerant (and was sick of the constant stomach aches) and today for the first time I made pancakes with soy milk and found they were a bit different, but still nice. My pancakes are more like crepes, so I’m used to rolling them up once I’ve put a topping on them, but these ones didn’t roll up so well as the soy milk tended to make them more stiff, and of course the flavour was different.
While making the mixture I suddenly realised I had no baking powder, and so for first time since I moved in here I actually met my neighbours, while asking them for baking powder….
It wasn’t a bad way to spend the night making and eating pancakes, though I was rather full and sticky afterwards đ
I was planning to write a story this evening, but the pancakes took up a lot of my time in the end.

I love pancake day đ I’ve been making mine with soy milk for 5 years now, as I also developed lactose intolerance. With sugar and maple syrup they’re delicious!

I started making pancakes with soy milk several years ago, actually! They totally work fine :). For a while whilst trying out veganism, I even made pancakes with just soy milk and flour! đ A recipe book suggested it and it just about worked, too. But a year later or so when I tried it again I couldn’t figure out how I’d managed it lol. Definitely better to have eggs in. The type of milk doesn’t make much difference. You have a cool retro cooker like my grandparents’!
Also thanks for reminding me that Shrove Tuesday = Pancake Day! đ I’ve really been out of the loop the last few years. I saw ‘Shrove Tuesday’ in my calendar earlier and thought it was some kind of Easter-related day and surprised to see it in February. It didn’t trigger at all đ¤Ļââī¸. I haven’t had the facilities to make pancakes for the last 3 pancake days, though :(. Happy pancake day!

They look great to me and I’m glad you’re borrowing from neighbors. I first met one of mine when we purchased our first house; I went door-to-door looking to borrow a large knife since I had arranged for a really long sub sandwich to feed our family members that helped us move. đ¤Ļââī¸ …there’s got to be a great story from that writing prompt…

I don’t eat them now (too high in carbs plus I don’t tolerate gluten too well) but when I did, I used plain flour… no need for baking powder. But then you wouldn’t have met your neighbour
